Meaty Birthday (Mini Cupcakes)
 
Ingredients
 
1 pound ground beef
1 stalk celery, finely chopped
1 cup quick oats or oat  flour
2 tablespoons tomato paste
2 tablespoons water
2 tablespoons Worcestershire sauce
2 eggs, beaten
 
Preheat oven to 400*F.  Mix the drg ingredients together in a large bowl.  In a small bowl, blend the tomato paste and water.  Add to the dry ingredients, along with the Worcestershire sauce and beaten eggs.
 
Prepare the mini muffin tins by greasing lightly or filling with paper liners.  Spoon into the cups.  Bake for 15 minutes.  If you don't have mini's, use regualr sized muffin tin and bake at the same temperature for slightly longer. 
 
 
Special Need Recipe
Salmon Blondies
 
Ingredients
 
14 1/2-ounce can salmon
1/2 cup cottage cheese
1/2 cup shredded cheddar cheese
1 1/2 cups garbanzo bean or other non-grain flour
 
Preheat oven to 350*F.  Empty can of salmon--liquid, bones and all into food processor.  Add cottage cheese and mix together well, to a mousse-like consistency.  Add flour and cheddar cheese and mix into a sticky, loose dough.  Cover a baking sheet with aluminum foil and grease it. 
 
Turn the dough onto the greased pan and push flat with wet hands.  Bake for 30 to 40 minutes until golden brown.
 
When cool, cut with cutters into desired size blondies.
